Want to mix up breakfast and lunch? Try these Cheesy Waffle BLT Sandwiches — they’re fantastic!

A few weeks ago I attended an event in Denver at D Bar Desserts as part of the Tillamook Loaf Love Tour. The chef there served a burger on herbed, cheesy waffle “buns”, and that idea stuck with me. I couldn’t resist putting my own spin on it.
After the event I visited Denver Urban Homesteading and found the most incredible heirloom tomatoes — huge, ripe slices the size of your palm. With basil freshly picked and thick-cut bacon ready, I set out to create a Cheesy Waffle BLT.

I used green onion in the batter, shredded white cheddar, and crisp bacon to build a BLT that uses cheese-and-herb waffles in place of toast. The savory, cheesy waffles pair perfectly with sweet, juicy tomato and crunchy bacon — possibly the best BLT I’ve had.

You don’t need to cure your own bacon to make these; a good-quality, thick-cut bacon works beautifully. Because summer tomatoes are at their peak for only a short time, make these while the tomatoes are perfect — once they’re out of season you’ll wish you had.

Ingredients
For the Waffles:
- 2 eggs separated
- 2 cups flour
- 4 teaspoons baking powder
- ½ teaspoon salt
- 1 ½ cups buttermilk or add 1 tsp lemon juice to regular milk and let sit 5 minutes
- 2 Tbsp melted butter
- ¼ cup green onion chopped
- ¾ cup grated cheese white cheddar recommended
For the Bacon, Lettuce and Tomato Sandwich:
- 8 waffles
- 8 pieces lettuce
- 4 large tomato slices
- Salt and Pepper
- 12-16 slices crisp bacon
- Mayonnaise or mix 2 Tbsp mayo with 1 tsp whole grain mustard
- Basil leaves for garnish
Instructions
To Make the Waffles:

Beat the egg whites until just firm and set aside.

Combine the flour, baking powder, and salt in a mixing bowl; whisk to blend.

Beat the egg yolks and mix them into the buttermilk (or milk with lemon juice).

Stir the wet ingredients into the dry ingredients until combined.

Add melted butter and mix on low until just incorporated.

Fold in the shredded cheese and chopped green onion.

Gently fold the beaten egg whites into the batter until just combined.

Preheat your waffle iron, add batter, and cook according to the manufacturer’s directions.
To Construct the Sandwich, layer the components in this order:

One waffle

Slice of lettuce
-
Tomato slice — season with salt and pepper

Bacon
-
A dab of mayonnaise mixture

Another slice of lettuce
-
Top with a second waffle
To serve

Cut each sandwich in half on the diagonal and skewer a basil leaf on each half for garnish.
