Easy No-Bake Peanut Butter Balls (A.K.A Truffles)

Servings: 50 truffles (party size!)

Ingredients

  • 2 cups creamy peanut butter
  • 3/4 cup butter (room temperature)
  • 3-4 cups powdered sugar
  • 2 (1 pound) packages chocolate candy coating (I like CandiQuik)

Instructions

  • In a bowl, mix the creamy peanut butter and softened butter until smooth and well combined.
  • Gradually add powdered sugar until the mixture is firm enough to hold together as a single ball. Amount needed can vary with peanut butter brand and humidity.
  • Cover and chill the mixture in the refrigerator for about 30 minutes.
  • Form the chilled mixture into 1-inch balls and place them on a wax paper–lined baking sheet. Use a cookie scoop for uniform size. Chill again—the colder they are, the easier the dipping.
  • Melt the chocolate coating following package directions. A microwave in short bursts works well in a silicone bowl.
  • Dip each peanut butter ball into the melted chocolate using a fork. Let excess chocolate drip back into the bowl, then return the truffle to the wax paper.
  • Allow the chocolate to set at room temperature, then refrigerate until ready to serve.

Notes

  1. To lighten the texture, replace some powdered sugar with crushed Rice Krispies or crushed graham crackers.
  2. Leave the tops uncovered to turn these into classic “Buckeyes.”
  3. Finish with sea salt, sprinkles, or an extra chocolate drizzle for a pretty presentation.
  4. Use any leftover melted chocolate to dip pretzels, fruit, or nuts.
  5. If the chocolate thickens during dipping, keep the bowl warm by nesting it in a shallow bowl of hot water to maintain a smooth texture.
