This ham fried rice is a family favorite—my kids always finish every last bite. It works perfectly as a standalone meal, or paired with teriyaki chicken and roasted broccoli for a heartier plate. It’s quick, comforting, and full of flavor.

I usually cook the rice in the Instant Pot for 3 minutes with a natural pressure release using a 1:1 rice-to-water ratio. This may not be traditional, but I find parboiled rice gives the best texture for this recipe rather than sticky rice. I often use Uncle Ben’s parboiled rice, but use whatever you prefer. Enjoy!
Note: you can halve the recipe if you’re cooking for fewer people—I make a large batch for my family of seven.

Ingredients
- 4 T butter
- 1 cup diced onion
- 1 cup diced green cabbage
- 6 oz diced ham
- 2 eggs and salt and pepper to taste
- 1/4 cup soy sauce
- 1 tsp sesame oil
- 1/2 cup frozen peas
- 1/2 cup corn
- 6 cups cooked rice
- sliced green onions for garnish
Instructions

Add butter, cabbage, and onion to a skillet over medium heat. Cook until the onion is translucent.

Add diced ham. Move the mixture to the sides of the skillet and make a space in the center for the eggs. Crack the eggs into the center and let them set until about halfway cooked, then scramble and mix with the other ingredients.

Add the cooked rice and stir well to combine, breaking up any clumps.

Stir in soy sauce, sesame oil, peas, corn, and most of the green onions. Cook until everything is heated through and the frozen vegetables are tender. Taste and adjust seasoning with salt and pepper if needed.
