Why this Rustic Berry Tart works

This recipe is quick, forgiving, and perfect for showcasing ripe berries. It comes together in minutes and bakes to a golden, flaky crust with bubbling, jammy berries in the center. The tart is versatile: make it any night of the week or save it for a celebration. Serve slices with whipped cream or vanilla ice cream for an extra-special finish.

How to Make a Berry Tart

  1. Prepare a pie crust and roll it into a circle, or use a pre-made crust straight from the package.
  2. Toss your chosen berries with granulated sugar and cornstarch to thicken the juices as they bake.
  3. Pile the berry mixture into the center of the crust, leaving a two-inch border around the edge.
  4. Fold the crust edges up over the fruit to form a rustic galette shape and brush the rim with beaten egg; sprinkle a little sugar on top.
  5. Bake until the crust is golden and the filling is bubbly, then cool before slicing.

The steps are straightforward and the results speak for themselves: a beautiful tart with vibrant berry flavor and a crisp edge. If you’re using a store-bought crust, let it sit at room temperature as directed on the package so it’s easy to work with. For bright flavor and the best texture, use ripe, firm berries and avoid overly watery fruit.

Author: Deb Attinella

Summary: A quick, rustic tart that showcases seasonal berries. Use a homemade pie crust or a store-bought crust for convenience.

Yield: 6 servings

Prep Time: 10 mins • Cook Time: 20 mins • Cooling Time: 30 mins • Total Time: 1 hr

Ingredients

  • 1 unbaked pie crust (homemade or store-bought)
  • 3 cups assorted berries (strawberries, blueberries, blackberries & raspberries recommended)
  • 2 tablespoons granulated sugar (for filling)
  • 1 tablespoon cornstarch
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon granulated sugar (for dusting crust)

Instructions

  1. Preheat the oven to 450°F (230°C).
  2. Place the pie crust on a parchment-lined baking sheet and set aside.
  3. In a large bowl, combine the cornstarch and 2 tablespoons granulated sugar. Add the berries and gently toss to coat evenly.
  4. Gather the berries into the center of the crust, spreading them out but leaving a 2-inch border around the edge.
  5. Fold the edges of the crust over the berries, overlapping the dough as needed to form a rustic edge.
  6. Brush the crust edge with the beaten egg and sprinkle with 1 tablespoon granulated sugar.
  7. Bake for 15–20 minutes, or until the crust is golden brown and the filling is bubbly. Remove from the oven and let the tart cool for at least 30 minutes before slicing into six pieces. Serve with whipped cream or vanilla ice cream if desired.

Notes

If using a store-bought crust, follow the package instructions to bring it to room temperature before rolling or unfolding. Cooling the tart before slicing helps the filling set so pieces hold together nicely.
