At the start of each week I like to prepare a simple, versatile protein to have on hand for quick meals during busy days. I change it up regularly so lunches don’t get boring: some weeks it’s a cold tuna or chicken salad, other weeks it’s roasted chicken with different seasonings or a batch of taco meat. This week I used the slow cooker and made crockpot Caesar chicken.

Having a cooked protein waiting in the fridge saves a lot of time and decision-making. When lunch time comes I can pull a few components from the fridge and have a meal ready in minutes.
There are endless ways to use prepped chicken: on a salad, in a stir-fry, in a wrap, or simply on its own. Crockpot or Instant Pot Caesar chicken is especially convenient because the chicken cooks in Caesar dressing and becomes marinated, juicy and tender.
If you haven’t tried Primal Kitchen’s Caesar dressing yet, it’s worth sampling. I use it for more than salads—marinating chicken is a favorite. The dressing is made with clean ingredients and is both Paleo and Whole30 approved. In this recipe it provides great flavor with minimal effort.
Cooking this dish in the slow cooker requires only a minute of prep. I placed two large chicken breasts in the crockpot, poured about 1/2 cup of Caesar dressing over them, coated both sides, then set the cooker and let it do the work. If you prefer to cook faster, the Instant Pot is another option; choose the method that fits your schedule.

Be sure to coat both sides of the chicken with dressing before covering the pot. I check the chicken about halfway through cooking to flip the breasts and recoat them with any dressing in the crockpot. If your chicken breasts are considerably larger or smaller than average, adjust the amount of dressing to ensure even coverage.
When the chicken is done you can shred it, dice it into cubes, or leave the breasts whole. I usually shred the chicken and stir in an extra tablespoon or two of Caesar dressing. That keeps the meat flavorful and helps it continue marinating as I use it throughout the week.

Ingredients
- 2 large chicken breasts, about 1 pound
- 1/2 cup Caesar dressing, or amount needed to coat chicken
- 1/2 teaspoon salt
Instructions
- Salt the chicken and place it in the crockpot.
- Pour Caesar dressing over the chicken breasts and coat both sides.
- Cook on high for 2 hours or low for 3–4 hours.
- Check halfway through to flip and coat with any dressing in the crockpot.
- Shred or cube the chicken and enjoy.
