Say hello to Mexican Lasagne. A tasty chilli with beans and veggies layered with tortillas and cheese, baked until golden. Quick, easy and family-friendly.

Dinner 2

⭐️ Use shop-bought breadcrumbs or make your own from stale bread (freeze then grate or blitz).

⭐️ A hard cheese such as Gran Padano is a cost-effective substitute for Parmesan.

⭐️ Serve with the coleslaw recipe used for the prawn tacos: use half the cabbage and one red onion, and make half the dressing.

⭐️ For oven chips: 1kg potatoes, 2 tbsp oil, 2 tsp salt, 2 tsp garlic granules.

  1. Preheat oven to 200°C and cut potatoes into chips (peeling optional).
  2. Toss with oil, salt and garlic granules and arrange in a single layer on a baking sheet.
  3. Bake 45–60 minutes, turning once, until golden and crisp.
