- 1 tablespoon oil
- 1 small yellow onion, finely chopped
- Freshly ground black pepper, to taste
- 2 cloves garlic, minced
- 13.5 oz (~3 cups) all-purpose flour
- 3 tablespoons sugar
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 ¼ cups blue cheese crumbles
- 1 (12 oz) bottle lager (an inexpensive lager works well)

Instructions
- Preheat the oven to 375°F (190°C).
- Heat the oil in a skillet over medium-low heat. Add the chopped onion and cook, stirring occasionally, until browned, about 10 minutes. Season generously with black pepper, add the minced garlic, cook for about 1 minute, then remove from heat.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt. Make a well in the center. Add the cooked onion and garlic, the blue cheese, and the lager. Stir gently until the mixture is moistened—take care not to overmix.
- Spray a 9 x 5-inch loaf pan with cooking spray and transfer the batter to the pan. Drizzle 1 tablespoon of the melted butter over the top and bake for 35 minutes. Remove the loaf from the oven and pour the remaining tablespoon of butter over it. Return to the oven and bake for another 20–25 minutes, or until the bread is golden brown and a toothpick inserted in the center comes out clean. Cool in the pan for 10 minutes, then transfer to a wire rack to finish cooling before slicing.
