When I was diagnosed with Celiac Disease in 1998, I had to develop a reliable gluten-free banana bread recipe.

First, the flavor. Unlike many banana breads that call for a cup of sugar, this version is lightly sweetened with just one tablespoon of honey, allowing the banana flavor to shine.

How to Make Banana Bread Tall

For a tall loaf, use the recommended 7.5 x 3.5 inch loaf pan. Using a larger pan will leave the batter too shallow and produce a short loaf.

Ingredients

  • 3 bananas, mashed (about 1½ cups)
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 1 tablespoon honey
  • ¼ cup palm shortening
  • 2 cups blanched almond flour (not almond meal)
  • ½ teaspoon sea salt
  • 1 teaspoon baking soda

Instructions

  • Pulse together bananas, eggs, vanilla, honey, and shortening in a food processor until smooth.
  • Pulse in the almond flour, salt, and baking soda until combined.
  • Scoop the batter into a greased 7.5 x 3.5 inch loaf pan.
  • Bake at 350°F for 55–65 minutes, until a toothpick inserted in the center comes out clean.
  • Cool the loaf for about 1 hour before slicing.
  • Serve warm or at room temperature. A cup of Dandelion Root Coffee pairs beautifully.
