Biscuits are a great choice for beginning bread bakers because they don’t need yeast or time to rise. These cinnamon sugar drop biscuits give you the feel of a special breakfast—like homemade pancakes—without a lot of fuss.

They’re sprinkled with sparkling cinnamon sugar and finished with a sweet glaze, which makes them ideal for holiday mornings, birthdays, or any weekend when you want to treat your family.

Tips for Fluffy Cinnamon Sugar Biscuits

Use cold butter and cold buttermilk. Keeping the dough cold before it goes into the oven helps the biscuits rise well and keeps them tender inside with a slightly crisp exterior.

Instead of cubing the butter and cutting it into the flour, try grating very cold butter on a box grater. The small shreds blend into the flour quickly and reduce the chance of overworking the dough.

Mix the dough only until it is evenly moistened—overmixing creates tough biscuits. Aim for a sticky dough and handle it as little as possible.

  • All-purpose flour

The process is straightforward: whisk the dry ingredients, cut the cold grated butter into the flour until the pieces are pea-sized, then stir in the buttermilk just until the dough comes together.

Scoop the sticky dough into rounds on a parchment-lined baking sheet, brush the tops with melted butter, and sprinkle with cinnamon sugar. Bake at high heat until golden on top.

While the biscuits bake, whisk together confectioner’s sugar, milk, and a touch of vanilla to make a smooth glaze. Drizzle the glaze over the biscuits while they are still warm so it melts into the cinnamon sugar topping.

Ingredients

For the Biscuits:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 1/2 sticks cold butter (12 Tbsp, grated)
  • 1 cup buttermilk

For the Cinnamon Sugar Topping:

  • 1 tablespoon melted butter
  • 1 tablespoon sugar
  • 1/2 teaspoon ground cinnamon

For the Glaze:

  • 1/2 cup confectioner’s sugar
  • 2 tablespoons milk
  • 1/4 teaspoon vanilla extract

Instructions

  • Preheat oven to 450°F. Line a baking sheet with parchment paper or a silicone mat.
  • In a medium bowl, whisk together the flour, baking powder, sugar, and salt.
  • Grate the cold butter and cut it into the flour with a pastry blender or two forks until the pieces are about the size of peas.
  • Add the buttermilk and stir gently until a sticky dough forms—do not overmix.
  • Scoop the dough into 12 rounds on the prepared baking sheet, leaving a couple of inches between each.
  • In a small bowl, combine the cinnamon and sugar for the topping.
  • Brush the tops of each biscuit with melted butter, then sprinkle with the cinnamon sugar mixture.
  • Bake for 12–14 minutes, until the tops are golden and a toothpick inserted in the center comes out clean.
  • While the biscuits bake, whisk together the confectioner’s sugar, milk, and vanilla until smooth.
  • Remove the biscuits from the oven and let them cool for a couple of minutes, then drizzle the glaze over the warm biscuits.
  • Serve warm and enjoy.

Notes

If you don’t have buttermilk, stir 1 1/2 tablespoons white vinegar into a measuring cup and add milk until it reaches 1 cup. Let it sit a few minutes to thicken and slightly sour, then use as a buttermilk substitute.
