I’m a Florida girl at heart: the beach is my happy place, bold prints are part of my wardrobe, and seafood is my go-to comfort food. Garden update in brief: the tomatoes didn’t thrive this year, the zucchini struggled, but the eggplant and gypsy pepper are doing okay. The herbs are flourishing, and my shishito pepper plant is enormous—so next season I’m focusing mainly on herbs and shishitos.

You can cook this recipe on the grill or in the oven. If someone’s home early, we’ll grill the salmon and add vegetables alongside. If not, baking the foil packet at 400°F works perfectly. Both methods produce moist, flavorful salmon and allow you to serve straight from the foil for minimal cleanup—one of the best parts of this recipe.

Ingredients

  • 1.5 pound salmon filet, skin on (up to 2 pounds is fine)
  • 1 tablespoon olive oil
  • 1 fresh lemon, sliced, plus extra for garnish
  • 2 tablespoons chopped fresh parsley, plus extra for garnish
  • 1 teaspoon smoked paprika
  • 1 teaspoon fresh minced garlic
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Heat your grill to medium-high (gas or charcoal) or preheat your oven to 400°F (200°C).
  2. In a small bowl, mix the parsley, smoked paprika, garlic, salt, and pepper.
  3. Pat the salmon dry and place it skin-side down on a large sheet of aluminum foil.
  4. Brush the salmon with olive oil, then evenly rub the spice mixture over the top. Arrange lemon slices on the fish.
  5. Fold the long sides of the foil up to create a tunnel and crimp the top; seal the short ends to form a packet. Place the foil packet directly on the grill grates or on a sheet pan in the oven. Cook 12–16 minutes, until the salmon flakes easily with a fork.
  6. Remove from heat, garnish with extra lemon and parsley if desired, and serve immediately.
