Next, add the coconut oil and pulse for 1½–2 minutes, scraping the sides every 30 seconds. Process until the mixture can hold together but don’t over-process it into nut butter. If the mix is too sticky to form balls, add 1–2 tablespoons of almond flour and pulse briefly.

Ingredients

  • 2 1/2 c pecans
  • 2 tbsp instant coffee granules
  • 2 1/2 tbsp dutch-process cocoa powder
  • 3/4 tsp stevia
  • 1 tbsp coconut oil

Instructions

  • Add all ingredients except the coconut oil to a food processor. Pulse about ten times to combine, then add the coconut oil.
  • Pulse for 1½–2 minutes, scraping down the sides every 30 seconds, until the mixture can stick together. Avoid processing into nut butter.
  • Form 20 fat bombs (about 1 tbsp each) by pressing the mixture together in your hands and rolling into balls. If too sticky, pulse in 1–2 tbsp almond flour.
  • Optionally roll fat bombs in a coating of your choice.
  • Refrigerate on a plate for at least 45 minutes. Store in the fridge.
