Happy birthday to you… Happy birthday Mom. Today is my mother’s birthday. Even though we are miles apart, we remain close in spirit. My mum isn’t very fond of big celebrations or elaborate cakes, so to mark the day I made a simple, no-cook Instant Coconut Barfi and some Homemade 5-star Chocolate Bites to celebrate quietly and sweetly.
Birthdays always invite celebration in different ways at every stage of life. As a child you bring sweets to school and share them with classmates and teachers, often with a best friend by your side. College birthdays are full of late-night cake cutting, long phone calls, surprises and parties. When you start working, celebrations often mix with a busy schedule — part work, part celebration. After marriage it becomes more of a family affair. The ways we celebrate change, but the desire to make someone feel special remains.
What do you usually do for your parents’ birthdays?
Sometimes the value of small gestures becomes clear only when you experience the reverse. On my own birthday this year I did the usual household chores instead of receiving special treatment, and that made me realize how meaningful those little acts of care are. Even if our parents come from a different generation, it is worth making an effort to make them feel special on their day. It’s never too late—do something different for your parents this year.
Although I am far away from my mother today, I prepared this No Cook Instant Coconut Barfi and Homemade 5-star Chocolate Bites to celebrate with her from afar. This Coconut Barfi is incredibly simple—no cooking required—so even a child can make it. Combine the ingredients, press into shape, let it set, and it’s ready. Delicious, coconut-forward bites that are perfect for sharing.
Here is what you will need to make it.
Preparation time: Less than 3 minutes
No cooking required. Allow about 15 minutes to set.
Makes: 13–20 pieces, depending on size.
Ingredients:
- 2 cups desiccated coconut
- 1.5–2 cups icing sugar (powdered sugar)
- 1/2 cup condensed milk
- 1/2 tsp vanilla essence
- Few drops of food color (optional)
- Extra coconut for dusting
Method:
- Line a chopping board or plate with plastic wrap or cling film and set aside.
- In a mixing bowl, combine the icing sugar, desiccated coconut and vanilla essence.
- Add the condensed milk and use your hands to mix thoroughly. Take some mixture in your palm, press and release; it should hold its shape.
- Sprinkle some extra coconut on the lined surface.
- Take half of the mixture and press it firmly onto the plastic wrap to form a rectangle, smoothing the sides.
- Color the remaining mixture with a few drops of food coloring if desired, then press it over the first layer to create a two-layer barfi.
- Sprinkle more coconut on top and refrigerate for about 15 minutes to set.
- Remove, cut into squares and enjoy.
Variations:
Add chopped nuts or dried fruits for additional texture and flavor.
Notes:
- Desiccated coconut is convenient and widely available. You can also use frozen or freshly grated coconut—my mother tried it with fresh coconut and gave it a thumbs up.
- Food coloring is optional; it adds visual appeal but doesn’t affect the taste.
- Store the barfi in an airtight container for 4–5 days.
- Setting time may vary depending on the type of coconut used.
- I used 1.5 cups of sugar because the condensed milk is already sweet; adjust sweetness to taste.
