If you want an easy cookie that fills your home with a wonderful aroma while baking, these snickerdoodles are the one. The recipe produces a large batch—about 40 cookies—but they disappear fast.

These snickerdoodles are semi-puffy and semi-chewy—an ideal balance. They keep and travel well, which is perfect for events and group activities. If you remember classic snickerdoodles from childhood, these will take you back—my husband often asks for them.

These are wonderful when you make them – and even better the next day! They look puffy in the oven but will settle as they cool. Let them cool before serving.

- 1 cup Butter-flavored Crisco shortening (no substitutes)
- 1 teaspoon vanilla
- 1 1/2 cups white sugar
- 2 eggs
- 2 3/4 cups (11.6 ounces or 330 grams) all-purpose flour
- 1 teaspoon baking soda
- 2 teaspoons cream of tartar
- 1/2 teaspoon salt
- 2 tablespoons white sugar
- 2 teaspoons ground cinnamon

Preheat oven to 375 degrees F (190 degrees C).

Line two baking sheets with parchment paper.

In a medium bowl, cream together the shortening, vanilla and 1 1/2 cups sugar with a mixer. Mix in the eggs. Sift together the flour, baking soda, cream of tartar and salt, then stir into the creamed mixture until well blended. In a small bowl, combine the 2 tablespoons sugar and the cinnamon.

Roll dough into walnut-sized balls or use a scoop, then roll each ball in the cinnamon-sugar so they are generously coated. Place balls on the prepared sheets about two inches apart.

Bake 9–10 minutes. Edges should be slightly brown and centers will be puffy when removed. Once slightly cooled, transfer to wire racks to finish cooling. Let cool completely before serving.

Store in an airtight container or freezer bag for up to 2 days. (They tend to disappear quickly!)
Don’t wait for significant browning—if they are brown, they are overcooked. Use butter-flavored Crisco shortening rather than real butter for best results; it yields a better texture in this recipe.
