Every year between Christmas and New Year’s I like to share a pork-based recipe for anyone who enjoys eating pork for good luck. In the past I’ve featured enchiladas, pulled pork grilled cheese, slow-cooker sweet-and-spicy pork shoulder and pulled pork tostadas. Those are only the beginning.

But until now, we’d never actually mixed pork into the guacamole.

Why not? I always pile guacamole on my carnitas tacos, so this felt like a natural progression.

Also, you know I’m a fan of wildly dressed-up guacamole. I love bold flavors and unexpected additions, and pulled pork absolutely fits that vibe.

One of the best things about adding crispy pulled pork: it brings texture and crunch before the chip even arrives. The contrast of creamy avocado and crispy carnitas is irresistible.

The flavor is intense and layered in a way that’s hard to describe—smoky, savory, bright from lime, and balanced by fresh cilantro and queso fresco.

Bonus: this version is accidentally low-carb if you skip the chips, so it could even fit into some New Year’s resolutions.

Ingredients

  • 1 cup pulled pork
  • 4 ripe avocados
  • 1 jalapeño pepper, seeded and diced
  • 1/3 cup crumbled queso fresco, plus extra for topping
  • 1/4 cup chopped fresh cilantro
  • 3 tablespoons diced sweet onion
  • 1 lime, juiced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Sliced jalapeño, for topping (optional)

Instructions

  • You can make the pork ahead of time or use leftover pulled pork. To crisp the pork, spread the shredded meat in a large baking dish and roast at 425°F for 20–30 minutes, tossing with a fork every 10 minutes. This step is optional but gives the pork a carnitas-like crispiness.
  • In a bowl, combine the avocados, queso fresco, cilantro, onion, lime juice, salt and pepper. Mash and stir until combined—make it as smooth or chunky as you prefer. Taste and adjust seasoning with more salt, lime or pepper if needed. Top with the crispy pork, extra cheese, cilantro and sliced jalapeños if desired.
