
I’ve developed a real fondness for world record attempts, and my recent trip to Kansas City only strengthened that. Smithfield invited me to join their Guinness World Records attempt for the Largest Grilling Lesson, and I was honored to take part. Smithfield hosted over 300 participants who grilled live alongside celebrity pitmasters Chris Lilly and Kevin Kolman to attempt the record.

Before the event we enjoyed plenty of Kansas City barbecue, and it was outstanding. I sampled must-try items across the city: the Z-Man sandwich (brisket), onion rings, burnt ends and pickles at KC Joe’s; ribs, hush puppies and potato salad at SLAP’s; pork belly corn dogs, wings, burnt ends and beef rib at Q39; and burnt ends, cornbread and grilled wings at Jack Stack. The burnt ends in KC are exceptional and worth seeking out.

When it was time for the record attempt, Chris Lilly and Kevin Kolman led the grilling class, focusing on ribs and pork chops. They explained how to build a two-zone fire—direct and indirect heat—and how to control temperature using vents: more air equals more heat. Chris Lilly, a nine-time Memphis in May champion, shared detailed tips for prepping pork ribs, including removing the membrane from the back and wrapping with a flavorful liquid during the foiling stage to retain moisture.

In the final portion of the class we prepared Smithfield marinated pork chops. The instructors recommended searing briefly over direct heat, then finishing indirectly, and emphasized the importance of using a thermometer. For juicy, tender chops aim for an internal temperature of 145°F. After everyone finished cooking, the Guinness adjudicator confirmed the record: the Largest Grilling Lesson was officially set at 336 participants.
The event was a memorable experience—great food, excellent instruction and a chance to meet many enthusiastic people. I’m looking forward to receiving my certificate and I’m grateful to Smithfield and the Hunter PR team for hosting the event and showing this Utah native an unforgettable grilling weekend.
