Ingredients

  • Base:
  • 1 cup / 150g whole almonds
  • 15 whole dates, stones removed
  • 2 tbsp coconut oil (melted)
  • 1 tbsp unsweetened cocoa powder
  • 1 tsp vanilla extract
  • Filling:
  • 4oz / 110g cream cheese
  • 3oz / 80g Greek yogurt
  • ½ tsp orange juice
  • ¼ tsp orange zest
  • ¼ tsp vanilla extract
  • Fruit topping:
  • Strawberries, kiwi, clementines, berries or any chopped fruit of your choice

Instructions

  1. Make the base: blitz the almonds in a food processor until they resemble a fine meal. Add the pitted dates, melted coconut oil, cocoa powder and vanilla. Continue to process until the dates are finely chopped and the mixture holds together.
  2. Press the mixture evenly into a springform tin or tart dish. Chill in the fridge for about an hour to set, or pop in the freezer for 15–20 minutes if you’re short on time.
  3. Prepare the filling: mix the cream cheese, Greek yogurt, orange juice, orange zest and vanilla until smooth. Spread the filling over the chilled base.
  4. Arrange your chosen chopped fruit over the filling. Serve immediately or refrigerate for up to a few hours before serving.
