Remove the cream cheese from the refrigerator at least 30 minutes before mixing so it softens and blends easily.

If you have time, cook and crumble real bacon for the best texture and flavor, though store-bought bacon bits work in a pinch. You’ll need about 1 cup of crumbled bacon for the recipe.

PRO TIP: One pound of sliced bacon yields roughly 1½ cups of cooked crumbled bacon, so cooking a full pound leaves you with extra for snacks or another recipe.

A pile of crisp bacon strips

To cook bacon in a skillet, cut the slices in half, then sauté over medium heat, stirring occasionally, until crispy—about 10–12 minutes. Drain on paper towels and crumble when cool.

Grate the sharp cheddar and pepper jack cheeses using a box grater or food processor. Pre-shredded cheese is fine if you prefer.

Cheese truffles ingredients

In a large bowl, combine the softened cream cheese, grated sharp cheddar, grated pepper jack, crumbled bacon, chopped green onions, ranch seasoning, garlic powder, and sour cream. Mix until smooth with a hand mixer, stand mixer, or a sturdy spatula.

Scrape the sides of the bowl with a rubber spatula. Use a 1″ spring-loaded scoop to portion the mixture into bite-sized balls, or measure roughly 1 tablespoon per truffle and roll between your palms to form smooth rounds.

Mixing cheese truffle ingredients

Prepare your toppings by crushing or chopping them—use a small food processor, place them in a zip-top bag and smash with a rolling pin, or chop on a cutting board. Place each topping in a separate bowl for easy rolling.

Roll each truffle in a topping bowl, pressing lightly so the coating adheres. Arrange finished truffles on a serving platter, cover tightly with plastic wrap, and chill up to 24 hours before serving.

Serve chilled with an assortment of crackers, pretzels, or pita chips for guests to enjoy.

Flavors & Variations

These truffles are highly adaptable—use what you have on hand or try one of the variations below to change the flavor profile.

Bacon

Cooked, crumbled bacon adds great texture and flavor. One pound of sliced bacon yields about 1½ cups cooked, so you’ll have extra if you cook a full pound.

Seasonings

Swap the ranch packet for a teaspoon of seasoned salt, a splash of Worcestershire sauce, or Everything Bagel seasoning for a different savory twist.

Veggies, Dried Fruits, & Herbs

Replace green onions with parsley, dill, basil, or rosemary, or stir in chopped sun-dried tomatoes or colorful diced bell peppers. Dried cranberries or cherries are a pretty, festive option for holidays.

Cheese truffles with crackers and pretzels

Meats

Fold in chopped salami, thin ribbons of ham, or pepperoni for a heartier bite.

Nuts & Seeds

Roll truffles in crushed toasted or candied pecans, macadamia nuts, walnuts, sesame seeds, or toasted pine nuts for crunch and flavor.

Cheeses

Try Monterey Jack, Parmesan, feta, Pecorino Romano, white cheddar, or Colby Jack to alter the cheese profile and richness.

Goat Cheese Truffles

For a tangier version, substitute goat cheese for cream cheese and roll in savory or sweet coatings for a different flavor experience.
