Ingredients
- 2 cups potatoes, peeled and diced
- 1 cup onion, chopped
- 1 tablespoon olive oil
- 1 package al fresco Roasted Garlic Chicken Sausage, cut into bite size pieces
- 1 (16 oz.) can sauerkraut, rinsed and well drained
- 1 (15 oz.) can petite chopped tomatoes
- A little black pepper
- Dash of red pepper flakes

Place the diced potatoes and chopped onion in a microwave-safe bowl. Microwave for about 4–5 minutes, until the potatoes are just beginning to soften.

Heat the olive oil in a large nonstick skillet over medium heat. Add the par-cooked potatoes, onion, and the sausage pieces. Sauté, stirring frequently, for about 4 minutes to brown and combine flavors. Add the rinsed, well-drained sauerkraut and the can of petite chopped tomatoes. Season with black pepper and a pinch of red pepper flakes to taste. Stir to combine, cover, reduce the heat to low, and simmer for another 3 minutes, or until everything is heated through and the potatoes are tender.
