These cookies are one of my favorite fast and easy treats. With only a few ingredients and minutes of hands-on time, you’ll have soft, flavorful cookies that are perfect for sharing or enjoying with a cup of coffee.

What are Cool Whip cookies?
Traditional cake mix cookies typically use cake mix, butter and eggs. In Cool Whip cookies, the butter is replaced with Cool Whip to reduce calories and create a softer, slightly different texture. The dough can be a bit sticky because of the Cool Whip, so rolling dough balls in powdered sugar helps shape them and leaves an attractive coating. You can also customize these cookies with different cake mix flavors—lemon and chocolate work especially well—or add mix-ins like chocolate chips or M&Ms.

Ingredients
Strawberry cake mix – One box (most cake mixes are 15–18 ounces). You can substitute another flavor if you prefer.
Cool Whip – 2 cups thawed whipped topping (about two-thirds of an 8 oz container). If you don’t have Cool Whip, you can use 1 stick of melted butter, but the texture and calorie count will change.
Egg – One large egg to bind the dough.
Powdered sugar – Optional, for rolling the dough and giving the cookies a pretty finish.

Method
Preheat the oven to 350°F (175°C).
In a mixing bowl, use an electric mixer to beat the Cool Whip and egg until combined. Add the strawberry cake mix and continue beating until the dough is smooth and well blended.
If using powdered sugar, pour it into a small bowl. Use a cookie scoop to portion the dough, roll each scoop in the powdered sugar (if desired), and place on a greased or lined cookie sheet, spacing them a couple of inches apart.
Bake for 10–12 minutes. The cookies may look slightly underdone when removed; they will firm up as they cool. Allow them to cool on the baking sheet for a few minutes before transferring to a wire rack.

- 1 pkg strawberry cake mix
- 2 cups Cool Whip, thawed (about 2/3 of an 8 oz container)
- 1 egg
- 1/2 cup powdered sugar (optional)
Instructions
- Preheat oven to 350°.
- Beat Cool Whip and egg together in a mixing bowl, then add cake mix and beat until well blended.
- Place powdered sugar in a small bowl. Scoop dough into balls and roll in powdered sugar if desired.
- Place on a greased or lined cookie sheet and bake 10–12 minutes. Cool on a rack.

Freezing
These cookies freeze well for up to three months. Place them in an airtight container and thaw at room temperature for a few minutes before serving.
